Custard:
• 1 ⅔ cups heavy cream (400 ml)
• ⅓ cup whole milk (100 ml)
• 5 egg yolks
• 1/2 cup sugar
• ½ teaspoon vanilla extract

Topping:
• 3 tablespoons granulated sugar (40 grams, approx.)

⸻

Instructions
1. Heat the Cream Mixture:
In a saucepan, combine the cream, milk, and vanilla. Heat over medium heat until it just begins to boil. Remove from heat.
2. Prepare the Egg Mixture:
In a bowl, whisk together the egg yolks and sugar until smooth and slightly pale.
3. Temper the Eggs:
Slowly pour the hot cream mixture into the egg mixture in a steady stream, whisking constantly. Strain the combined mixture through a fine mesh sieve to ensure a silky custard.
4. Bake in a Water Bath:
Preheat oven to 300°F (150°C). Divide the custard into ramekins and place them in a deep baking dish. Fill the dish with hot water until it reaches halfway up the ramekins’ sides. Bake for 30–35 minutes, or until the centers are just set with a slight jiggle.
5. Cool and Chill:
Remove ramekins from the water bath, cool to room temperature, then refrigerate for at least 2 hours or overnight.
6. Caramelize the Sugar:
Before serving, sprinkle 1–2 teaspoons of granulated sugar over each custard. Using a kitchen torch, caramelize the sugar until golden and crisp. Let stand for 1–2 minutes before serving.

Ingredientes

Crema:

  • 1 ⅔ tazas de crema para batir (400 ml)
  • ⅓ taza de leche entera (100 ml)
  • 5 yemas de huevo
  • ½ taza de azúcar
  • ½ cucharadita de extracto de vainilla

Cobertura:

  • 3 cucharadas de azúcar granulada (aproximadamente 40 gramos)

Instrucciones

¡A disfrutar!
